Hello everyone and welcome back to my blog for another trip to another beautiful country. I hope that you all tried to make French crepes, had fun with it and enjoyed the delicious treat. This week we are traveling to a country which I cannot wait to actually see with my own eyes and that country is Greece. When I think of Greek cuisine I think of it as the heart of Mediterranean food. According to a Masterclass article, the land in the countryside of Greece is very fertile and home to many different kinds of fruits and vegetables. One of the main ingredients in Greek food is olive oil and that is because of the large number of olive trees the land has. Greek cuisine is around 4,000 years old and has been influenced by many other empires throughout the decades. Greece also shares many Mediterranean flavors with its neighbor Italy, so you’ll very similar ingredients between the two.
This week we will be making something that is not very traditional but holds lots of the Mediterranean flavors that you will see in Greece. We are going to make a Greek pasta salad with a homemade dressing. This pasta salad is super simple to make and you can customize it if you don’t like something in it. The pasta salad its self has tri-colored pasta, crumbled feta cheese, cherry tomatoes, cucumbers, black olives, and purple onion. The dressing is made of kalamata olives, garlic, oregano, lemon juice, salt, black pepper, red wine vinegar, extra-virgin olive oil. This dressing perfectly coats all the pasta and it is very light so you can have as much as you want. I recommend letting it sit over night after making it so that you can let all the flavors develop and give the pasta time to soak up the flavors. This pasta is something I have made many times and it is really good for warm days when you want something light and refreshing. I highly recommend you guys make this and here is the recipe I used.
